Caseificio Sociale Fior di Latte is a dairy cooperative producing Parmigiano-Reggiano cheese and is one of the most important realities in Alta Valle del Reno, from the economic point of view, considering the developed volume of business and from the social point of view, considering the number of families which, being partners or workforce within the company, live on the dairy activity. The Cooperative was started in 1965 and it has been producing Parmigiano-Reggiano since 1968. It’s important underlying how the roots of Caseificio Sociale Fior di Latte thrust down deeply into the past. In actual facts, the Cooperative boasts an over 30-years history, being its inspiring values and traditions much more older.
Milk is entirely produced by 31 partner-farms located in Gaggio Montano (BO). These ones gave milk for a total quantity of 25.000 quintals that have been entirely transformed: 23.000 q. became Parmigiano-Reggiano serial number 3624. The remaining 2.000 q. have been transformed into a large variety of soft cheeses, such as traditional mozzarella, mozzarella in treccia, tosone, squacquerone, fresh and ripped caciotta, melted cheese and yoghurt. Although Caseificio Sociale Fior di Latte respects dairy tradition and Parmigiano-Reggiano Consorzio rules, it follows a line of investments to improve its working and seasoning techniques, using the technology new inventions of dairy production.
The cooperative also has a collateral activity, the breeding of swine, fed with the serum deriving from Parmigiano-Reggiano production. Every year nearly 1.500 head of cattle have bred and then wholesale traded.
